My black Labrador Retriever has a red, flakey inner ear and he's been shaking his head around a bit. He is not moving around as much as usual either. What's wrong?

I have a border collie/dalmation cross bitch and she has recently started scratching her ear and shaking her head. I have a 3 year old Golden Retriever. He is prone to ear infections so, I clean his ears once a week. Prior to this winter (we live in New England) his ears have been fine as soon as summer ends; However, while they look fine(i.e. no inflammation) he shakes his head and rubs up against objects to itch his ears. My dog is three and she has had an ear problem ever since she was a little puppy. Its inflamed (red) looking, and sort of scaley, and it has a bad odor. It also sounds like liquid is possibly in the ear canal. I have tried all kinds of over-the-counter remedies, cleaned her ears with q-tips and everything I can think of. I have heard if its a yeast infection, I can put yogurt in there and the enzymes will eat the yeast, but is that really healthy?
